Unlike traditional metal steels, the ceramic material used in the sharpening surface is truly smooth, helping to prevent trapped bacteria, as well as other debris like food or blade microfragments. This ensures every swipe of the blade only hits the ceramic sharpening surface, helping to prevent damage to the blade, whilst also providing exceptional sharpening performance.
